When we say the ingredients in our dishes at Harvest are locally sourced, we’re not kidding. As a matter of fact, plenty of them come from the Farm at Homestead Manor, which sits right in our own backyard!
This includes seasonal vegetables, herbs and eggs that come from our pasture-raised chickens we have on-site. Theses are unique from cage-free or free range chickens — ours are truly on pasture all the time. Every few days, our agricultural curator, Steven Bailey, and his team relocate the coop to fresh grass on the “back 40” for multiple reasons:
- – Chickens are omnivores and love fresh bugs, grasshoppers, grubs and clover to chomp on.
- – It’s cleaner! 95% of our eggs are clean before we even start the egg washing process because we don’t let them stay near waste for long.
- – Keeps disease down. Since we’re always on the move, parasites don’t have a chance to develop.
- – We let the land heal. Allowing the soil to recover encourages new growth and a better pasture for when the birds return.
To sum it up, healthy hens equal healthy eggs. At Harvest at Homestead, we embrace farm-to-fork whole-heartedly.
